Zucchini soup
Summer is over here in Denmark, and it has gotten a lot colder, and that just say soup that warms you up.
Zucchini is one of the veggies I have in my garden that has given me so much this year, and I have pretty much eaten it in everything, but it is also an amazing veggie to have in a soup!
4 Servings
1 big onion, chopped
3 cups zucchini, cut into 1x1cm- ish
1 leek, roughly chopped
1/2 Tsp garlic powder
1 tsp Provence herb mix
1/4 Tsp turmeric
3 cups vegetable broth
1 can (240g) butter beans
1/2 cup oat milk
how to:
Heat up a non-stick pot (or use a little water or oil) at medium heat.
Fry the onion until they go a little soft.
Add the zucchini, leek, spices, and vegetable broth, and cook it until the leek and zucchini are tender around 10-15 minutes.
Add oat milk and beans and cook for another 5 minutes.
